
Billecart-Salmon
In 1993, Francois Rolland-Billecart, the 6th generation of Billecart men to run the estate, took over and repositioned the brand by buying back the estate’s bottles from supermarkets and focusing on independent quality retailers and fine dining restaurants. The estate’s most famous prestige cuvee, Clos Saint-Hilaire, was born in the remarkable 1995 vintage and has been produced ever since. The wine is a one-of-a-kind cuvée, named in honor of the patron saint of the church in Mareuil-sur-Aÿ and made up of no more than 3,500 to 7,500 individually numbered bottles each vintage.
Billecart-Salmon is committed to environmental sustainability and has been certified High Environmental Value and Sustainable Viticulture in Champagne. They believe in respecting the terroir to produce outstanding wines and manage their vineyards with the utmost respect for the environment. This is reflected in the House’s long-term state of mind that calls for constant self-assessment and continuous progress.
The House’s wines are particularly noteworthy for their finesse, freshness, and subtlety of flavors, which are maintained through the use of traditional methods and innovative techniques. These characteristics are especially evident in their flagship cuvée, Brut Rosé.
