Billecart-Salmon
Billecart-Salmon is a Champagne House founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, who brought together their vineyards in Mareuil-sur-Aÿ and Chouilly. After participating in the 1900 Exposition Universelle in Paris as a sponsor of the Palais du Champagne, the House experienced a decline in sales due to World War I and Prohibition in the US. However, the estate was revitalized under the management of Jean Roland-Billecart, who introduced the technique of longer fermentations at lower temperatures and double cold settling to maintain the freshness and finesse of the fruit. In 1964, the estate created their Cuvee Nicolas Francois, followed by their non-vintage Brut Rosé in 1970.
In 1993, Francois Rolland-Billecart, the 6th generation of Billecart men to run the estate, took over and repositioned the brand by buying back the estate’s bottles from supermarkets and focusing on independent quality retailers and fine dining restaurants. The estate’s most famous prestige cuvee, Clos Saint-Hilaire, was born in the remarkable 1995 vintage and has been produced ever since. The wine is a one-of-a-kind cuvée, named in honor of the patron saint of the church in Mareuil-sur-Aÿ and made up of no more than 3,500 to 7,500 individually numbered bottles each vintage.
