Universally acclaimed as one of Meursault’s rising stars, Arnaud Ente has earned his reputation for wines of harmony. Before taking over his family’s vineyards in the 1990s, he worked for Coche-Dury, an opportunity that imparted him with taste for mineral precision in his white burgundies. This said, Arnaud also seeks to balance that precision with a subtle opulence, allowing the grapes slightly longer hang time on the vines. He and his wife, Marie-Odile, farm four hectares of vineyards sustainably. While most of their holdings hail from the Clos des Ambres (within the terrior of En Ormeau), their most notable vineyards are three parcels of premier crus in Meursault, Puligny-Montrachet and Volnay.
After the harvest, Arnaud often crushes the grapes before extracting the juice through gentle pressing. The juice settles for 24 hours before he racks them into barrels and larger demi-muids, only 20% of which is dedicated to new oak. The wines then age for 11 months before a racking into tank for an addition six months. Arnaud then bottles the wines unfined and unfiltered—an unusual practice for prestigious whites, but one that allows the terroir and the fruit character of the grapes to sing with abundance and restraint.
