About Clement Perseval

Clement is now on his fourth release after spending some time staging with Anselme Selosse, prior to taking over his family's Domaine.  The wines are made in a similarly slightly oxidative style, everything is farmed organically by hand (by Clement himself and his horse, Romain) and there is no dosage in any of the wines.  He picks late and prefers to use the natural ripeness of the fruit to balance acidity.  Elevage takes place over 18 months in used 225L barrels.  This newest release we also asked Clement to hold back for one additional year in bottle to show a more vinous style and to gain additional complexity.

There are three main cuvees that split the 1er cru hillside vineyard in Chamery, all organized by altitude and soil type.  The top of the slope where the soil is thinnest and the vines sit close to the chalk, there is Chardonnay, which goes in to two bottlings - 1er Cru Blanc de Blancs, and the 2012 Rouleaux Millesime.  Further down the slope the soil becomes more sandy which is well suited for Pinot (Noir and Meunier) - this is bottled as Chamery 1er Cru.  Below the sand lies an area of Clay which is perfect for Pinot Noir and is bottled solo as 1er Cru Blanc de Noirs.
