Their winemaking philosophy revolves around minimal manipulation, allowing the wines to express themselves fully. Starting with whole-cluster fermentation, each parcel is vinified separately. Unlike others, the Jamets prefer the use of neutral vessels such as larger pieces and demi-muids, allowing for a more judicious integration of oak flavors. After aging for up to two years in barrels, the wines are bottled unfined and unfiltered, resulting in remarkably silky, refined, and aromatic wines.
