Clarie Naudin and Jean-Yves Bizot of BiNaume

About BiNaume (Clarie Naudin/Jean-Yves Bizot)

Binaume is a joint project between Claire Naudin and Jean-Yves Bizot, two of Burgundy’s most respected winemakers. The idea for the project came about in 2016 after a devastating frost destroyed much of Naudin's crop. The couple sought to source grapes from a nearby area, eventually finding Pinot Noir and Gamay from Saint-Pourçain in the Allier department. Interestingly, the sandy soil of Saint-Pourçain is different from the limestone-clay mix typical of the Côte d’Or. Claire hand-harvests the grapes before driving them back to the domaine, a journey of about two hours. Both grapes are vinified whole-cluster in cement tanks with no added sulfur. For the Gamay, she presses early to preserve the fruit and ages the wine in cement dolia. The wine is bottled unfined and unfiltered with a hint of sulfur dioxide at bottling.

Claire Naudin has been pushing for higher standards in Burgundy since taking over her family’s winery in 1994. She works organically but dislikes organic certification because she feels it misses the bigger picture of farming practices. Her wines are known for their originality and freedom. The BiNaume project embodies these values, allowing the couple to create something unique outside the boundaries of traditional Burgundian winemaking.
