Domaine de L'Enclos, while only inaugurated in 2016, is deeply rooted in Chablis' tradition, being led by the seasoned hands of Romain and Damien Bouchard, fifth-generation vintners. Having a rich legacy with their family estate, Domaine Pascal Bouchard, the Bouchard brothers embarked on a fresh journey, founding L'Enclos after retaining nearly thirty hectares of invaluable vineyard terrain. Nestled in an ancient château in the heart of Chablis, the winery swiftly attained organic certification and has focused on minimum intervention winemaking since inception.
Highlighting their unparalleled commitment to vineyard stewardship, they employ 19 dedicated staff year-round, ensuring organic vineyard management through the judicious use of sulfur, copper, and plant treatments. The estate's emphasis on quality is evident, with vines aged from a commendable 30 years in their standard Chablis, to a venerable near-60 in prized parcels like Les Clos and parts of Fourchaume. The wines resonate this dedication: hand-harvested, meticulously sorted, and naturally fermented. Premier and Grand Cru expressions mature in older barrels, encapsulating the essence of Chablis—precision, intensity, and a profound sense of place.
