The palate is well-balanced, quite understated on the entry, fresh and sapid. The very controlled and focused finish has just the right amount of bitterness to get the saliva flowing. The aftertaste is very long and persistent. Domaine Paul Pillot, nestled in the heart of the Chassagne Montrachet, has been producing world-class white Burgundies since its inception in 1900. Directed by Thierry Pillot since 2004 and supported by his sister Chrystelle, this family domaine has reached new heights, garnering praise as one of the finest addresses in the region. As the fourth generation of Pillots to farm the vineyards in Chassagne-Montrachet, Thierry and Chrystelle have focused on vineyard management, employing organic practices and careful training of their vines. The domaine consists of 12 hectares of vineyards, worked by a dedicated team of 13 individuals.

In the cellar, Thierry employs a non-interventionist approach, allowing native yeasts to perform the barrel fermentation. The wines mature for 18 months – 12 months in oak and a further six months in stainless steel. This process results in wines with stunning depth of fruit, vibrant acidity, and well-integrated oak, showcasing their purity and intensity.

Domaine Paul Pillot has exceptional vineyard holdings in Chassagne’s most renowned sites, including La Romanée, Les Grandes Ruchottes, Les Caillerets, and La Grande Montagne. Their stunning Clos St-Jean, both Pinot Noir and Chardonnay, hails from the heart of the original Clos traditionally called Chassagne du Clos Saint-Jean.

Preserving freshness and tension is paramount at the domaine, with large-format casks of 350 and 500-litres used for fermentation and aging. The lees are never stirred, and wines are bottled unfiltered. Thierry’s red wines have also gained recognition in recent years, perhaps in part due to his familial rivalry with brother-in-law Arnaud Mortet. Fermented with 20-60% whole bunches and minimal new oak, these reds now perform at a similar level to the domaine's white.

Humble and discreet, Thierry Pillot and his family continue to produce benchmark Burgundies, reflecting their unwavering commitment to quality, innovation, and tradition.
