The wines of Domaine Vincent Dancer, established in 1996 in Chassagne-Montrachet, are a must-buy for any serious Burgundy collector. Vincent's son, Theo Dancer, has now taken over, continuing the family tradition of producing wines that are revered for their freshness and unique complexity. The vineyards have been certified organic since 2012, with new plantings at high density and higher training as well. Theo Dancer's cellar techniques are minimal, using native yeasts, no temperature control, no stems, and no pumping over, preserving the authenticity of the grapes.
