Their winemaking leans natural and is anything but mainstream. They oppose how Chablis has become standardized, and they refuse to conform. They hand pick their grapes, ferment with naturally occurring yeasts, age in neutral oak barrels, and only add sulfur when bottling. You’ll have to taste the magic in the glass yourself, but you can expect pure fruit, vibrant acidity, and what Neal Martin of the Wine Advocate calls “very classy Chablis” and “one of the most intellectual Bourgogne Blancs that you will find.”
