Guilbert Gillet

Established in 2020 by Benjamin Guilbert and his wife Caroline, Domaine Guilbert Gillet is a rising star in Burgundy, situated in the heart of Savigny-lès-Beaune. The estate spans 3.6 hectares, including 0.5 hectares of white vineyards, meticulously managed by the couple. Their commitment to organic and sustainable viticulture ensures the health and vigor of their vines, with hands-on care and horse-drawn plows.

With his extensive background working at esteemed estates like Château Smith-Haut-Lafitte and Domaine de Montille, Benjamin Guilbert employs traditional Burgundian winemaking techniques. Red grapes are fully destemmed, followed by extended maceration and gentle pressing. The wines are aged for 18 months in barrels without racking and bottled using gravity during a favorable lunar phase.

In a relatively short period, the domaine has expanded its offerings significantly. Starting with just five cuvées from the domaine in the 2020 vintage, it now boasts 14 domaine and four négoce cuvées as of the 2022 vintage. This rapid growth is a testament to the quality and uniqueness of their wines, which have quickly become highly sought after by collectors and enthusiasts alike.

The domaine’s small scale allows for meticulous attention to detail, from the vineyard to the cellar. Each plot is tended to based on its specific needs, enhancing the expression of the unique micro-terroirs. Benjamin's deep connections with renowned winemakers have resulted in wines that not only reflect the unique terroirs of Savigny-lès-Beaune and Chorey but also challenge and elevate perceptions of these appellations.
