Ployez-Jacquemart, a family-run champagne house, was established in 1930 by Marcel Ployez and Yvonne Jacquemart. This champagne house meticulously cultivates its own Pinot Noir and Pinot Meunier vineyards in the Premier and Grands Crus villages of Ludes and Mailly Champagne. The estate's vineyard management extends to manual work and selective harvests to ensure the overall quality. Furthermore, Ployez-Jacquemart maintains enduring relationships with growers from Grands Crus Chardonnay villages to elevate their assemblage and maintain year-on-year consistency.

Laurence Ployez's unique approach is evident in her winemaking process. Unlike many Champagne producers, Laurence endeavors to retain the characteristics of each vintage in her non-vintage blends, using only minimal reserve wine, if at all. In addition, she uses only first-press juice, with light filtration for vat-aged wines and no filtration for barrel-aged ones.

The wines undergo slow fermentation in a 25-meter-deep cellar, producing extremely fine bubbles. Aged 'sur pointe' rather than on their side, the wines benefit from the antioxidative and aging properties of the lees without becoming overly rich. Post an extended cellaring period, up to 12 years, the wines are disgorged with a minimal dosage, typically 3-4 grams per liter, to preserve the wine's inherent structure and highlight the distinct personality of each harvest.

Laurence's meticulous techniques ensure the maintenance of consistent quality across their annual production of 100,000 bottles. Among the six cuvées commercialized by Maison Ployez-Jacquemart, the flagship is the Liesse d'Harbonville, produced only in exceptional years and aged for over ten years to enhance its extraordinary freshness. Laurence's commitment to highlighting the mineral qualities and fruit notes with crisp aromas in her wines reflects her love for wine and her dedication to preserving the vibrancy of each vintage.
