Domaine Baron Thénard, under the watchful eye of owner Jean-Baptiste Bordeaux-Montrieux, is a hidden treasure amidst the landscape of Burgundy wine. The 18th-century cellar, an embodiment of wine heritage with its damp, dark ambiance, houses wooden fermenters that are possibly a century old. Still in use today, these open-top fermenters are responsible for the estate's traditional red wines.

The domaine has an extensive 18-hectare spread in Givry, divided over three 1er Cru sites: Clos du Cellier aux Moines, Clos Saint Pierre, and Bois Chevaux. But the crown jewel of its vineyard portfolio is an almost two-hectare holding in Le Montrachet, making it the second-largest proprietor of this coveted terroir. Other notable vineyards include Premier Cru Clos St. Jean in Chassagne, Iles des Vergelesses in Pernand, Grand Cru Clos du Roi in Corton, and Les Grands Échezeaux in Flagey.

The winemaking process remains steeped in tradition. Reds are fermented in wooden tonneau barrels for a fortnight and subjected to foot punch-downs twice daily, followed by an aging period of 12 to 18 months in barrel. The whites are fermented and aged in the barrel, with spontaneous fermentations that often stretch for months. The use of new oak has been moderated, especially on the Montrachet.

The estate's three Givry holdings have distinct characters. Clos Saint-Pierre, a monopole of the domaine, sits highest on the slope, east-facing, and has red soil that yields the most tannins, making these wines remarkably age-worthy. Mid-slope, east-facing Bois Chevaux and south-facing Clos du Cellier aux Moines, with its clay-rich soil, also produce wines that are not only delightful in their youth but show impressive longevity.

The Montrachet Grand Cru from Domaine Baron Thénard is an exceptional display of Burgundy's Chardonnay at its finest. The wine, with an average vine age of 45 years, expresses a profound depth and richness. It is fermented and aged entirely in barrel, with 50% new oak, resulting in a complex character with toasted brioche and lees aromas, followed by citronella, spice, and mineral flavors. Its long, creamy finish reflects meticulous winemaking, respecting both the terroir and the vintage.

Domaine Baron Thénard's wines strike a balance between traditional techniques and respect for terroir, culminating in Burgundy wines that provide a superb expression of Pinot Noir and Chardonnay. The wines are firm and rustic, reflecting their authentic, age-old winemaking style. Their ability to age admirably is a testament to the winery's dedication to crafting high-quality wines that are worth both collecting and drinking.
