Mark your calendars for "De Moor season," the small window of time when you can acquire new releases from this boutique producer. Husband and wife duo, Alice and Olivier, have been crafting wines for over 20 years. They only make a handful of Chardonnay, Aligote, and Sauvignon Blanc in extremely tiny quantities from their organically farmed estate in Courgis, a small village southwest of Chablis.
Their winemaking leans natural and is anything but mainstream. They oppose how Chablis has become standardized, and they refuse to conform. They hand pick their grapes, ferment with naturally occurring yeasts, age in neutral oak barrels, and only add sulfur when bottling. You’ll have to taste the magic in the glass yourself, but you can expect pure fruit, vibrant acidity, and what Neal Martin of the Wine Advocate calls “very classy Chablis” and “one of the most intellectual Bourgogne Blancs that you will find.”
