Domaine de Bichery, situated in the picturesque landscapes of Neuville-sur-Seine in the Côte des Bar, Champagne, is a testament to the power of collaboration, innovation, and commitment to excellence. The essence of this domaine emanates from the young couple Raphaël and Hannah Piconnet. Together, they've leveraged Raphaël's rich family heritage, viticulture education from Beaune, Burgundy, and a Masters degree from Changins, Switzerland, to birth a dynamic winemaking entity.
Raphaël, devoted to his grandfather Charles's legacy, utilizes the latter's vine bud wood for planting. A testament to the resilience of tradition, these vines thrive across six parcels on the same sloping hills that once cradled Charles's original vineyards. Rooted in tradition yet driven by innovation, the Piconnets converted the vineyards to organic farming, earning organic certification for all their vineyards by 2019.
Inheriting his family's vineyards, Raphaël, with Hannah, produced the first vintage of Domaine de Bichery Champagne in 2015. From Pinot Noir to Chardonnay and Meunier, each single-vintage and single-plot cuvée emanates from selectively harvested ripe fruit, revealing an intense, vinous, and fruit-forward champagne that captivates with its vivacity.
The winemaking process adheres to minimal intervention principles, fermenting and aging the base wines in a mix of old oak barrels and stainless-steel tanks without filtration or fining. Sulfite use is minimal, and no dosage is used, which enhances the terroir's phenomenal expression and vintage characteristics. The Piconnets are a proud part of the Association des Champagnes Biologique and Des Pieds et des Vins, both vital to the Champagne community's pursuit of quality and innovative styles.
