About Domaine Servin

From the esteemed vineyards of Chablis comes the acclaimed Domaine Servin, where François Servin upholds his family's multi-century-old winemaking tradition. Following the palate of his grandfather, François believes in a Chablis that has a full-bodied texture with a long, extended finish, aging gracefully over decades rather than years.

Domaine Servin, tracing its roots back to 1640, owns an impressive expanse of 37 hectares, extending from Petit Chablis to four prestigious grand crus: Blanchots, Bougros, Les Clos, and Les Preuses. François Servin, a staunch traditionalist, is cautious about introducing changes to the vineyards. While he considers organic wine-growing too hazardous in the northern Chablis environment, he is progressively minimizing the use of chemicals.

A third of Domaine Servin's territory encompasses Les Pargues, a single parcel between the premier crus of Montmains and Vosgros. Historically equivalent to the premier crus, this area was excluded from the classification following the devastation of phylloxera. François and his father were among the vintners who replanted Les Pargues in the 1960s. Within Les Pargues, Servin practices sélection massale, cultivating new plants from selected vines, covering four hectares. The remaining seven hectares comprise clones.

Domaine Servin has transformed in response to changing times. Frost protection allowed larger areas to be planted and more wine to be produced, prompting a shift from oak barrels to stainless steel tanks. François experimented with new barrels in the early 1980s, finding that some wines gained from the oak contact while others were better preserved in tanks.

The calcareous clay soils prevalent in Chablis are underlain by Kimmeridge limestone that lends the wines their unique character. With all its wines sourced from the singular Chardonnay grape, Domaine Servin proves the variable nature of wine production through distinct winemaking methods, resulting in one of the world's finest Chardonnays. The best vintages are oak-fermented to enhance their intrinsic character, while others are left in stainless steel tanks to maintain their finesse and freshness. The Servins' winemaking journey continues, with a constant commitment to express the pure essence of Chablis in every bottle.
