After several years where this site bore the brunt of hail and frost, Montee de Tonnerre is back with a vengeance. Embedded in the heart of Chablis, Domaine William Fèvre was established in 1959 with an unwavering commitment to producing authentic, refined wines uniquely expressing the Chardonnay varietal. This commitment has positioned the estate as a standout name in Chablis. Acquired by the Henriot family in 1998, the domaine holds an impressive spread of Premier and Grand Cru vineyards, totaling 39.29 acres and 37.56 acres, respectively – the largest array in Chablis.

Guided by the expert hand of Didier Séguier since 1998, the winemaking process places paramount importance on minimal intervention, organic farming practices, and showcasing the distinct Kimmeridgian minerality of Chablis terroir. As a result, the estate has farmed organically since 2000, with 50% of its vineyards following biodynamic practices since 2010. This unwavering commitment to sustainability has led to the prestigious "High Environmental Value" (HVE) status in 2015, reflecting the highest level of environmental certification in France.

Their Premier Cru wines, which include Beauroy, Montmains, Vaillons, and Fourchaume, are mostly fermented in old French oak and finished in stainless steel, showcasing distinct terroir expressions. For instance, Montmains is well-known for its mineral aromas and powerful expression of the terroir, while Fourchaume offers a floral nuance, making it an ideal partner for shellfish.

The pinnacle of their offerings is found in the Grand Cru vineyards, including Bougros, Valmur, and Les Clos. These wines undergo a similar production process as the Premier Cru wines but showcase a greater complexity and longevity.
