Naïma and David Didon, luminaries in the winemaking world, reign over a biodynamic estate in Chassey-le-Camp, a quaint hamlet within the AOC Bouzeron, renowned as Burgundy's exclusive Aligoté village appellation. Their 2-hectare vineyard, Vignes Blanches, is adorned with a diverse array of grapes - Pinot Noir, Pinot Blanc, Chardonnay, and Aligoté, harvested from the east-facing slope rich in dense yellow limestone. This vineyard, considered amongst the finest in the village, owes its exceptional vitality to the Didons' dedication to sustainable viticulture, utilizing horse-plowing and manual labor to avert soil compression.
Inside the cellar, the Didons adopt a minimalist approach, incorporating a mix of traditional and innovative techniques. White grapes undergo whole bunch pressing, while the red undergo a brief 10-day skin maceration. Fermentation takes place in diverse containers - amphorae, barrels, and fiberglass, followed by a year on lees prior to bottling. An emphasis on natural processes guides their winemaking, with most wines remaining without any added sulfur.
David's journey to becoming a seasoned viticulturist saw him embracing biodynamics in the mid-90s, working on organic farms, and later aligning with Etienne de Montille in Volnay, where he spearheaded the transition to biodynamics. His experiences, coupled with Naïma's unwavering support and shared philosophy, led to their endeavor in Chassey-le-Camp in 2017.
The Didons' wines, a testament to their conscientious farming and low-intervention winemaking, are pioneering a new standard of Burgundy wines - unadulterated, expressive, and exhilarating, promising a bright future for wine enthusiasts.
