On the palate, it's medium to full-bodied, delicate and incisive, with a delicate phenolic presence and a sneakily persistent finish. Peters contends that the tannins of Pinot Noir would amplify the austerity of Le Mesnil, hence his decision to work with Pinot Meunier. The vins clairs are aged in stainless steel and the wine is given two years aging sur latte prior to disgorgement. It offers up a bright and nascently complex nose of cherries, rhubarb, chalky soil, lovely floral tones, a nice touch of spice and a smoky topnote. On the palate the wine is full-bodied, focused and zesty, with a good core of fruit, snappy acids, fine balance, frothy mousse and a long, nascently complex finish.
